Mount Fishtail Pinot Gris 2011 |

The wine has a pale straw green colour with just the barest hint of pink from the skins. It shows characteristic baking spices aromatics along with ripe golden delicious apples, white peach and pear compote. The barrel fermentation components show subtle nuttiness while the wild yeast portion contributes a yoghurt like complexity. The palate is satisfyingly full bodied with a modicum of residual sugar to round out the mouthfeel.
Grapes for this wine were sourced from the old pear block on the slopes of the lower Waihopai Valley. Soils on these sites differ greatly from the valley floor with higher proportions of clay mixed in with the gravels. As with the previous vintage the vines were trained on a 2 cane, VSP trellis, allowing the fruit to hang below the canopy and be ventilated by the gentle breezes this site enjoys. We experienced an attenuated ripening season in 2011 hanging the fruit out for a week longer than previous years.
The fruit was picked in the cool of the night and pressed after a short period of skin contact. The free run was tank fermented with a specialist Alsace yeast strain designed to ferment relatively slowly. This is a very gentle yeast that develops the aromatics and palate weight in Pinot Gris particularly well. The pressings we ferment in old French oak with wild yeast, providing some interesting funkiness, texture and depth of flavour. It was kept on yeast lees for 3 months post ferment to add palate interest.
