This is a big, multi layered Cabernet with dominant dark berry fruit, cedar wood and herbaceous capsicum and the typical characteristics of cool climate terra rossa soils.
Solid, sturdy and reliable, Coonawarra Cabernet is a classic Australian benchmark. Distinctive deep red with brick red hues, it has a stately bouquet of rich fruitcake, cassis and polished mahogany. The palate is firm and assertive with big mouth-filling flavour of ripe blackcurrant, mint, herbs and savoury characters of tobacco, leather and smoky oak. The texture is sophisticated with firm, fine grained tannin and lovely long aftertaste. It’s an aristocratic wine that takes time to get to know. Pour a good sized glass, swirl to allow plenty of air contact, rest for a few minutes then cut some mature cheese and crackers with walnuts and dried muscatel … it’s now ready to play.
The Chris Hill Reserve wines are a collection of limited release, personal favourites that express an extra dimension of character and flavour. This Coonawarra Cabernet was grown on premium terra rossa soils and made locally at the Great Stone winery. I’ve used mainly 2 – 3 year old French oak barrels over three years for cellar maturation. This method allows the finished wine to develop slowly with integrated oxidation and oak up take. The benefit is smoother, fine grained tannins and a long dry finish. The final twist was the addition of 3.5% 2010 Cabernet from McLaren Vale and a gentle fining with egg whites. I find a splash of youthful exuberance give a lift to the mid palate and the fining ensures there are no harsh edges. This wine has the body and structure to provide consistent pleasure for the next 4-8 years.
