Vintage Conditions Winter rainfall in 2009 was above average, giving good soil moisture levels for budburst in early spring. Favourable conditions continued during spring with minimal frost allowing for excellent vine canopy development and fruitset. During November, much of South Australia experienced a protracted ‘hot spell’. However, most vineyards were spared from damage as bunch development was still at an early stage. Due to the above average summer temperatures prior to vintage, ripening was accelerated with harvest beginning 10 days earlier than usual. Cabernet Sauvignon exhibits the benefit of slow maturity, ripe seeds, and rich tannins.
Winemaking Fruit was selected by the winemaker and picked when both flavour and Baume were optimum. Fruit was cold soaked and fermented at 25-32°C for an averaged 7 days.
