Reschke Vitulus Cabernet Sauvignon 2008 |

Colour: Medium density crimson, nice magenta edges.
Bouquet: Black currant and vanilla–like oak with just a hint of cabernet stalkiness.
Palate: Round in structure and soft in texture, this wine has plenty of cassis and spicy, almost peppery flavours.
Fermentation: The fruit was destemmed and crushed to 19 tonne static fermenters. Ferment proceeded at around 25 ◦ C for around 5 – 7 days. Pressing was carried out at dryness. Pressing and free run were combined and then racked after 7 days of settling. The wine was then seeded for malolactic fermentation.
Oak Handling: Following Malolactic ferment the wines were racked to small oak barrels. The wine spent 24 months in 25% first use French oak hogsheads and 75% second use and older French and American barriques and hogsheads. Rackings were carried out in the first year and second winters to help clarify the wine and soften its structure.
Wine Maker’s Comments: This Vitulus shows a little more oak than is normally the case. The severe spring frosts of 2006 saw a very small harvest and a much younger menu of barrels used for this Vitulus and hence more obvious oak characters. Normally barrel ageing is used as a method to give the wine roundness and length and not interfere too much with the fruit characters that are the hallmark of Coonawarra Cabernet Sauvignon. The wine delivers that unmistakable Coonawarra fruit but with a nice layer of support. Its good level of natural acidity will see this wine ageing slowly and gracefully resulting in even greater complexity and the development of cigarbox and chocolately characters – Peter Douglas.

The vineyard holdings of 360 acres, consist primarily of Cabernet Sauvignon, there is also a selection of Merlot, Shiraz, Petit Verdot and Cabernet Franc.
