Yellow Tail Merlot is made with grapes sourced from the highest quality vineyards. The grapes are fermented on skins in contact with oak. Temperatures are kept high to ensure maximum colour and tannin extraction. The wine is bottled on the estate.
A rich, deep garnet colour with purple hues. The nose is packed with ripe plum and red berry aromas, hints of spice and vanillin oak. The palate is full bodied and fruit driven, flavours of fruitcake and ripe plums are backed by olives, chocolates and mint, balanced by subpple supportive oak. The finish is smooth and lingering as the palate is enhanced by hints of vanilla and spice. An easy drinking wine designed for immediate enjoyment, excellent with all foods, superbly suited to char grilled salmon or tuna, the finest cheeses and flavoursome Italian recipes, especially pasta with meat sauces.
