Dark purple red. On the nose a fragrant raspberry and red fruit opening followed by black cherry, leaf litter and brown spices. The palate is both fruit-rich and structured showing sweet black fruit, toast, pomegranate, currants but also an underlying game-meat character and stalky thread. This is solid, spicy and structured wine.
Origin: A regional blend from the following villages in the Yarra Valley - Seville 64% (Killara, Ainsworth), Diamond Creek 26% (Hickory Downs) and Coldstream 10% (Oakridge).
Winemaking: Approximately 2/3 from vineyards with red and grey volcanic soils (64%), the other 1/3 from alluvial based sandy clay loams, with a high iron content. All vineyards have different site orientations – south/east, north and easterly. Vine age across the vineyards ranged from 14 -28 years, with generally, 2,500 plants per hectare. All vineyards were cane pruned to achieve a crop loads of 5.5-6.5t/Ha. Hand picking commenced on 23th February and finished on 4th March. All grapes were chilled overnight in refrigerated containers prior to gentle destemming and transfer of 100% whole berries to stainless steel fermenters. The ferments where allowed progress naturally, and apart from an initial pump over, where left untouched to ferment over a 15-24 day period at temperatures between 12–34°C. Refridgeration was not required. Once dry, the ferments where pressed to a mixture of French oak puncheons, hogsheads and barriques to complete malolactic fermentation. On completion of malo, the wines where sulphured in place, and matured on malo-lees until blending. Only topping was conducted during this period.
