Appearance: Crimson red with hints of purple.
Bouquet: Ripe plum and berry fruit enhanced by spicy oak.
Palate: A balance of plum and berry fruit with a hint of cassis, combined with some savoury notes and spicy oak. A medium bodied wine with soft tannins and a lingering finish.
Vintage Conditions: The lead up to the 2010 harvest was one of the best on record, with refreshing rains during spring and mild December temperatures. This led to fruit with flavour intensity and acid structure not seen for a few years.
Winemaking: Shiraz and Cabernet Sauvignon vineyards were monitored throughout the ripening season to allow the selection of fruit that displayed berry flavour ripeness and optimum sugar/acid balance. Fermentation at warmer temperatures of 20-22°C for 5-7 days to optimise the extraction of desirable flavour and colour whilst retaining a soft tannin structure.
Cellaring: Best enjoyed as a youthful wine however it could be carefully cellared for up to three years.
Suggested Cuisine: Lamb, Beef, tomato based pasta dishes or pizza.
