  Colour: Dense purple with a bright red, purple rim.

Aroma: Lifted ripe plums and red berry fruit notes complimented by hints of clove and vanilla bean spices.

Palate: Supple fruit core of juicy dark plum and bright red berry fruit notes dominate, held together by fine grained tannins across the mid palate with a lovely acid line.

Vintage Conditions: A warm, dry vintage was experienced in 2010 in Western Australia with no significant rain events or issues with disease in the vineyard. These conditions resulted in uniform ripening in the Cabernet Sauvignon and Merlot varieties with intense colour and fine, mature tannins achieved at full ripeness. The vineyard Blocks were managed to ensure an even rate of ripening with the canopy architecture allowing light and heat into the fruiting zone during the morning and late afternoon periods whilst protecting it during the middle of the day.

Vinification and Maturation: In the lead up to harvest, the fruit in each vineyard block was tasted twice weekly to ensure it was picked at its optimum. The Merlot was picked between midnight and early morning to ensure it reached the winery as cold as possible. The fruit was then gently destemmed and transferred to a fermenter where it was held cold for three to four days prior to fermentation. This cold soaking technique contributes unique aromatics to the end wine, stable colour and ensures a soft texture in the resultant wine style.

The Cabernet batches however, were picked during the day to ensure fruit temperature was 15-20°C - ideal conditions to ensure immediate fermentation. Each parcel was fermented at 22-24°C for six days with each ferment being thoroughly aerated every eight hours along with seed removal early in fermentation. At completion of fermentation, each parcel was pressed separately to tank before being racked off yeast lees to tank. A portion (40 percent) of the blend was matured on French oak with the balance of components maturing in tank. All parcels were kept separate until assessed at the final blending stage to be considered for the final blend. The finished blend was then filtered only once prior to bottling.

The name Gnangara, aboriginal for underground spring, was inspired by the natural spring which lay beneath the original Evans & Tate winery.
