It is often said that Rose is the perfect wine for the Australian climate—not too heavy nor too light, having plenty of flavour, crisp and refreshing. In other words, ideally suited to our outdoor eating habits and lifestyles. It is best lightly chilled, yet can be enjoyed even if it is served icy-cold or rather warm.
There are two main methods used for producing Rose—skin contact or saignee. In the first method, grapes are crushed, chilled and held until enough colour has been extracted from the skins. The juice is then separated from the skins by pressing. This juice is then treated as a white wine--fermented, usually at cool temperatures and sometimes in oak barrels, and bottled early to retain fresh fruity characters.
In the second method (used by Terra Felix to produce this Rose), red grapes are crushed in the normal manner for making red wine. After a short period, some juice is drawn off from the tank, clarified and fermented as Rose. The remaining grapes continue their fermentation to produce red wine. The winemaker chooses the appropriate moment to draw off the juice and the longer he leaves it, the more vibrant the colour of the Rose—and also the more fruit flavour in the resulting wine.
After drawing off the juice, we fermented with an aromatic yeast to enhance the spicy, berry fruit we identified at crushing. Cool ferment temperatures and minimal handling further protected these valuable flavours.
We used this method on three different varieties, Mourvedre, Shiraz and Grenache, to give a layered, complex array of flavours in the finished wine.
Mourvedre brings colour and spiciness, Shiraz brings berry fruit flavours and depth, Grenache brings softness and exotic rose petal characters.
Rose wines are best consumed in their youth to enjoy the lively fruit flavours at their optimum.

These vibrant fruit flavours are enhanced by a soft, refreshing palate structure. The finish likewise is soft and lingering with a gentle acidity and just a hint of fruit sweetness.
