This shiraz was harvested at the start of vintage and is characterised by good natural acidity and great intense flavours. Starting with a cold soak the grapes were fermented in an open tank. After 3 weeks of fermentation the wine was pressed into large French oak vats where the wine continued maturing for 20 months. Each barrel is monitored individually throughout the 24 months of maturation. The aim is to allow the vineyard to express itself with minimum intervention.
Colour: Bright Crimson with deep purple hues.
Aromatics: Dark chocolate, layers of red & black berry fruit with soft earthy notes accompanied by a hint of spice and oak
Palate: A dense yet elegant wine with highly concentrated fruit. Brooding dark fruits with liquorice. The savouriness and oak complexity is balanced by the richness of fruit and silkiness of the tannins. Long, beautiful length with excellent persistence.
Cellaring: Will reward cellaring for 5 -8 years or more.
