This wine forms part of Clarendon Hills’ ‘Grand Cru’ classification.
This masculine and often tightly-wound expression is often dominated by harder-edged and powerful characters. Recessed and concentrated, this wine has a mineral under-fabric that accentuates the boldness of its understatement.
Ginger and white pepper spice the edges of black fruits, liquorice and Kalamata skins, smokey bacon and bitter chocolate.
Virgin tight tannins, liqueur‐like richness within the flavour profile is defined with remarkably focused and precise acid profile. Rolling flavours mingle on the light‐medium weighted mid‐palate and a powerful finish of spicey Syrah follows.
Low-medium yielding, dry grown 45 y/o vines are hand picked thereby culturing whole berry, wild yeast fermentation. This increases the retention of the grape’s varietal essence and minimises bitter tannin extract. All pressings are returned to the barrel and bottled onsite without fining or filtration.
18 months, 85% brand new, tight-grained French Oak. Barrels are finally hand selected by winemaking team.
The 2006 vintage in Clarendon is best surmised as a Mediterranean finish to what was otherwise a typical Australian summer. The earlier onset of Autumnal coolness slowed ripening towards the end of the harvest season and enhanced colour development and enriched skin thickness ensued. The Hickinbotham vineyard is dry grown in super-compact, iron stone/gravelly soils and terraced over steep slopes. Hand picking took place over several passes to ensure optimal ripeness of the fruit.
The Hickinbotham family are instrumental players in Australian wine history, and Alan Hickinbotham bought this estate in 1960. Clarendon Hills sources wines from this stately vineyard to produce a single site Cabernet Sauvignon, Syrah and old-vine Grenache – all detailed by the Hickinbotham family name. Richly compact soils provide depth and a signature across the varietal spectrum.
