100% Shiraz
The Gask is sourced from a single plot of Shiraz nestled into the eastern slope of Mt. McKenzie that is painstakingly nurtured by the Knight family. Planted in 1960 this elevated site yields small, intense berries that possess great intensity of flavour without sacrificing balance & poise. These berries give the wine an "ink-like‟ hue whilst the nose serves up notes of smoke, graphite, crushed rocks and blackberry liqueur. It's quite a heroic wine in style yet retains the cooler edge and tighter structure that the great wines made from this region are famed.
After hand harvesting this small batch was destemmed into two cement vats where it spent 7 days before being ‘gravity-drained’ and basket pressed. The juice was later racked into old French barriques where it completed a slow malo-lactic fermentation and was aged for a total of 18 months. As with all of our wines, it was bottled without the use of fining or filtration.
