"Deep vivid red; backward on the bouquet with blueberry, blackberry, thyme and also showing some development; medium-bodied with fresh, almost tangy acidity, fine tannins and a lingering earthy note to conclude." - James Halliday.
COLOUR: Deep red with magenta rim.
AROMA: Deep raspberry, bitter cherry, spice and earthy graphite with creamy char notes underpinning everything.
PALATE: The palate opens with juicy raspberries and other subtle red fruits. It is tight yet with soft acid. The cedary oak, fine tannins and bitter chocolate balance the spicy, fleshy finish.
WINEMAKING: Crushed in the Yarra Valley (Victoria), the must was transported to the Barossa Valley. With 3 days cold macerating prior to fermentation in 5 and 10 tonne open top fermenters with regular pump overs; 3 daily during peak fermentation to extract colour and tannin. Following 15 days of maceration the dry free run was drained to tank and the skins pressed to the same tank. After 24 hours, the wine was racked to barrel, where malolactic fermentation took place. Minimal fining and filtration.
