Hand-picked and sorted grapes were gently whole bunch pressed to French barriques and puncheons and allowed to ferment by their own unique indigenous yeasts. Extended lees contact and a small percentage of malo-lactic fermentation added weight and complexity to the palate.
Beginning with citrus and spice the palate displays a textural mouth-feel with great length and focus. A clean acid finish begs for another glass.
Spoil yourself and accompany with freshly shucked oysters.
