Colour: Pale to mid straw with a fresh, light green rim.
Aroma: A wine that showcases the purity of Chardonnay from Margaret River with intense primary fruit aromas of honeydew melon, ripe nectarine and fresh peach with a delicate floral lift.
Palate: The wine has a fantastic core of juicy Chardonnay flavours of honeydew melon, ripe green apple and stonefruit that fill the mouth and provide great length of flavour.
VINTAGE CONDITIONS: The 2009 vintage in Margaret River produced exceptional ripening conditions, resulting in richly flavoured wines with fantastic varietal intensity. Following the cool finish to 2008, the ripening months of January, February and March saw a series of prolonged periods of warm weather punctuated with short, cool, dry spells. This allowed for slow ripening which retained natural grape acids and produced great flavour concentration in the Chardonnay varietal.
VINIFICATION AND MATURATION: Fruit was sourced from vineyards in the central and northern part of the Margaret River winegrowing region that consistently produce fruit and wines with great freshness and flavour intensity at low Baume levels. Once the fruit had reached the desired level of natural acidity, harvesting occurred in the coolest part of the night / early morning. The fruit was destemmed before being softly pressed in an air bag press to extract the highest quality free-run juice. The juice was settled before being racked off the grape solids and warmed in preparation for a cool, even rate of fermentation to maximise fruit expression. In order to achieve this succulent and zesty wine style, no malolactic fermentation was used. Following fermentation, a small parcel that represented 15 per cent of the final blend was lightly oaked while select parcels, representing 35 per cent of the blend remained on very light yeast lees to impart subtle mouth feel to the end wine. The remaining 50 per cent was racked off yeast lees immediately following fermentation to provide pure, primary fruit driven batches that drive this wine style. New technology has also been employed to chill the wine to be extra cold during the filtering process to retain the freshness and purity of the fruit.
