Sticks Chardonnay 2009 |

A very hot and dry growing period with vines producing smaller than average crops of Chardonnay. A conscious decision was made to harvest earlier than usual to maintain fresher citrus characters in the final wine.
Hand picked fruit was gently pressed with free run juice only taken. The juice was cooled and allowed to settle, then racked into barrel and stainless steel vessels for fermentation.
A selection of new and old French oak barrels and wild fermentation has produced a wine of texture and interest. Post-fermentation, the wine was left “sur lie” and “battonage” was employed to create a creamy and soft palate texture and to increase the aromatic profile.
