Bright pale straw with green tinges. The aroma is perfumed and complex with elements of lime zest, fennel, cumin and a hint of talc. The palate is firm with subdued herbal/vermouth like characters that give way to a crisp dryness on the finish.
Tasmania escaped the worst of the heatwave that characterised the vintage in most mainland regions, although a peak of 36º C was reached in mid-March. This warmth and sunshine allowed fruit to ripen well and build flavour while retaining good acidity. This resulted in picking at lower baumé levels to produce more elegant styles with lower alcohol while avoiding any detrimental impact on flavour.
SOUTH is about producing fresh, aromatic wines to complement modern food styles, using the finesse of northern Tasmanian fruit. The combination of a truly cool climate and summer rainfall, features which we share with northern France and New Zealand, make Tasmania particularly well suited to the production of these early-drinking wine styles.
