Dubbed 'little sister' to Noble One, this elegant sweet white displays citrus and stone fruits with a light touch of oak. Bright, zesty finish with balanced acidity.
Appearance Mid straw yellow
Bouquet The nose has fresh lifted aromatics of citrus with peach, apricot and subtle vanillin oak.
Palate An elegant wine displaying citrus, peach and apricot fruit characters, a touch of vanillin oak with a refreshing acidity that gives the palate wonderful length and balances the botrytis sweetness.
Vintage Conditions A mild summer with no rain until late March which enabled the botrytis growth to begin. Further showers late April and early morning dews kept the botrytis spreading. Harvest began in mid May and concluded early June after good botrytis infections were achieved throughout all vineyards. Baumés ranged from 19° to 24° depending on the vineyard and the percentage of botrytis.
Winemaking Each year we leave Semillon grapes in the same vineyards for the botrytis to take hold and impart amazing flavours and sweetness to the fruit. The juice is fermented in tank for 4-8 weeks at 13-15°C. Each vineyard is kept seperate during fermentation and maturation, then just prior to bottling the wine is blended with careful consideration of each parcel.
Cellaring A wine that can be enjoyed immediately and also can be cellared for 2-5 years under good conditions.
