Cool climate, complex and rich with good acidity. The gentle pressing avoids the bitterness to which the variety is prone. The aromas are intriguing with characters of honeysuckle, citrus blossom, ginger, musk and apricot. The flavour is rich and full with a textural quality from the firmness of the variety and the creamy or biscuity character of the yeast autolysis from the yeast work.

The aromas are intriguing and deep with characters of honeysuckle, citrus blossom, ginger, Musk and apricot. The flavour is rich and full with a textural quality from the firmness of the variety and the creaminess from the yeast work.
The fruit is gently whole bunch pressed in a basket press. The juice is fermented in large 35 Hectolitre French oak cask and matured on yeast lees until bottling in late spring. The wine is only handled once to bottles. The total production is 6000 bottles.
The Viognier vines were planted in 1999 and are now fully mature. The vines are trained on the Lyre trellis system to fully expose the fruit to sunlight and enhance flavour. The yields are kept low at 2.5 to 3.5 tonne to the acre. The vines are hand pruned and the grapes are hand picked. The grapes are harvested at 13.5 to 14.5 baume and 7 -8 grams acidity.
