Glorious well ripened Cabernet that shouts DRINK ME from start to finish! The low yielding 2006 vintage went into French oak which has imparted some gorgeously subtle light coconut flavours but the predominant characteristic on the bouquet and palate is brooding dark forest fruit, blackberry, black currant and plum. Originally planted by the Light family during the 1960’s, this perfectly sited vineyard near Clarendon has consistently produced outstanding individual wines. It’s been used in a number of highly acclaimed labels, most notably the Normans Chais Clarendon Cabernet. The cold growing conditions in the Adelaide Hills produce elegant, lean Cabernet Sauvignon. It ripens late in the season and needs a specific microclimate with shallow stony soils and a northerly aspect to achieve the perfect level of physiological ripeness. THIS IS IT!
