This wine forms part of Clarendon Hills’ ‘Grand-Cru’ classification.
Layered and powerful, this expression is recessed and sedate in its early years. Dark fruits are nicely spiced with cinnamon, Black Cardamom, liquorice and cabernet freshness. The most structured of its two sisters, the finely grained talcum texture, majestic depth and balanced savoury complexities are a hallmark of classic old-world styled Cabernet Sauvignon.
Espresso, cigar tobacco, bitumen, Kalamata, cherry skins, sweet earthiness. Exceptional clarity within the multi‐layered and complex expression. Each aspect of the composition complements and mutually defines the horizon of the savory profile.
Ultimate example of restrained power‐ waves of integrated flavour within silky and modestly endowed extraction. Its recessed and ready for 25 years in the cellar. A hedonist’s choice.
Dry grown 45 y/o vines are hand picked thereby culturing whole berry, wild yeast fermentation. This increases the retention of the grape’s varietal essence and minimises bitter tannin extract. All pressings are returned to the barrel and bottled onsite without fining or filtration.
18 months, 90% brand new, tight-grained French Oak. 10% hierarchy of 1-4 year old barrels. Barrels are finally hand selected by winemaking team.
The Hickinbotham family are instrumental players in Australian wine history, and Alan Hickinbotham bought this estate in 1960. Clarendon Hills sources wines from this stately vineyard to produce a single site Cabernet Sauvignon, Syrah and old-vine Grenache – all detailed by the Hickinbotham family name. Richly compact soils provide depth and a signature across the varietal spectrum.
