Cockfighters Ghost Cabernet Sauvignon 2007 |
| |
|
|
This is the sixth release of the Cockfighter's Ghost Langhorne Creek Cabernet Sauvignon.
The Langhorne Creek region, located south of Adelaide, is renowned for producing full-fruited red wines with gentle tannins.
WINEMAKING The fruit was crushed and fermented at our winery in Pokolbin in March 2007. After fermentation, the wine was matured in small French oak barrels before being bottled in January 2009.
WINEMAKER’S NOTES – Usher Tinkler
Deep red in colour, the wine has vibrant blackcurrant and ripe mulberry aromas. The palate is concentrated with dark fruit flavours of blackberry and blueberry integrated with soft super fine chocolate tannins to provide balance and length of flavour.
This is a rich, concentrated cabernet sauvignon, which will continue to improve for up to 10 years if cellared in optimum conditions.
It complements seared venison, braised beef cheeks or aged parmesan.
