Clear, bright and dark cherry red in colour it has small berry characters on the palate. A superb mouth feel; plush with sweet fruit and although light bodied, packed with sweet spice and all things nice. A very good Victorian Pinot that brings some wonderful deep redcurrant flavours together with some softer tannins and good length. Wonderful accompaniment to pasta and antipasto dishes or the weekend news paper and quiet contemplation.
This wine was made from pinot noir from two cool climate site. Coldstream in the Yarra Valley and Musk in the Macedon Ranges. Both meticulously cared for vineyards. The richness of the fruit from the Yarra Valley is complemented by the subtlety and superb natural acid from Musk Vineyard.
Upon arrival at the winery, part (approx 50%) is crushed and de-stemmed and part is whole bunch or whole berry fermented, there is always a component of stems in the mix. We introduce a cultured yeast along with pectin into the must and fermentation commences and lasts for 5-7 days, cooling is applied when temperatures reach 30 degrees and pH is adjusted with tartaric acid to be in the region of 3.45.
