  Aromas of black cherry are followed by a palate filled with plum and blackcurrant characters. The mouthfeel is full, yet mellow and the finish displays an even balance of ripe fruit flavours and soft, finer tannins. Ideal for drinking right now, it will also age gracefully over the next few years. A good grilled steak would be the perfect accompaniment.

The Shiraz and Cabernet are fermented on skins separately in open tanks for 8 days at a controlled temperature of 20 to 24 C until there is sufficient colour and tannin for this wine style. No sulphur is added in the wine making process until the wine has undergone malolactic fermentation for greater natural colour and tannin development. It is then drained and pressed before being transferred to older American oak. Maturation for 10 months in oak balances the wine’s fruit with soft integrated tannins.

The fruit for the Shiraz Cabernet is sourced from the Schrapel family and neighbouring vineyards in the Barossa Valley. Traditional viticulture practices are applied with vines hand pruned to 70 buds per vine to limit yields and concentrate grape flavours. Each vineyard is picked separately and the wine kept separate throughout the wine making process until the final blending.

The impact of the drought of 2006 has been widely reported as one of the worst for agricultural regions of South Australia. The reduced winter and spring rainfall followed by dry conditions in December and early January resulted in crop levels being reduced by approximately 40% for red varieties. The 2007 season was therefore earlier and shorter than the usual harvest with fruit ripeness being accelerated by the warm conditions. Mid January saw heavy rainfall, coinciding with veraison, refreshing the vine canopy and assisting with flavour development of fruit prior to harvest.
