McWilliam's Balance Brut Cuvee NV |
| |
|
|
Colour: Pale to medium straw.
Bouquet: Citrus notes of mandarin and lemons combine with fresh peach and rock melon characters. Subtle floral notes are also evident.
Palate: The palate is rich in flavour, dominated by intense orange and mandarin citrus characters. A fresh structure is balanced by soft, low acidity and a creamy, refreshing finish.
Vinification and Maturation: The grapes were harvested early to retain high natural acidity and to keep alcohol levels low. The parcels of wine were fermented at low temperatures to retain fruit flavours and were lees stirred for three months to increase complexity and palate weight. Blending was performed to produce a beautifully balanced palate with intense fruit flavours that is lower in alcohol.
