50% Chardonnay, 35% Pinot Noir, 15% Pinot Meunier.
The fresh, crisp flavours in this quintessential Pinot Noir, Chardonnay and Pinot Meunier blend have been enriched with the creamy yeast background provided by 25 months lees contact.
Initially the delicate bubbles lift the attractive apple berry aromas; these are then joined with hints of spicy vanilla, cinnamon and white flowers. With 25 months on lees, complex characters of brioche and toasted bread come in to play. Yet, there is an apparent freshness to the wine with a pinch of rose petal and orange blossom on the nose. This sparkling white is fine and elegant in texture with a fantastic balance. It has a soft and round mouth-feel complemented with a lemon zest finish and lingering patisserie flavours.
Established in 1974 by Peter Rymill, great grandson of John Riddoch, the founder of Coonawarra, Rymill’s distinctive winery lies in the heart of this famous region. Grapes grown exclusively in its own Coonawarra vineyards reflect the perfect combination of unique terra rossa soil and ideal cool climate for which the district is renowned. Winemaker Sandrine Gimon works with vines between 15 and 35 years of age, which allow her to make wines of substance and character.
