Paul Giraud is the best exponent of what a Grande Champagne origin cognac should be (and rarely is): - Ethereal in its floral and fruity aspects on nose and palate. - Expresses the “Peacock Tail Phenomenon” which is a delayed explosion of aromas after a return from the back palate.
Suddenly, very different, with plummy, grapy fruitiness coming in. Very elegant, touch of honey. Palate: sweet, honeyed, plummy, pruney fruit. Same elegance, but more richness and depth, and savoury woody character. Classic Grande Champagne with perfect balance between fruit and age.
