The fruit was harvested and fermented on skins for six days to extract colour and fine grained tannins. Partial fortification on skins was carried out using neutral spirit, which aids integration and further flavour development and complexity. The wine fermentation was halted, drained and pressed before a final touch up fortification was carried out. The wine was then cold stabilised and filtered and allowed to age in old barrels and wooden vats for six to eight years to soften out the tannins and colour in the wine.
Colour: Tawny brown with golden tinges.
Aroma: Lifted aromas of raisins, walnuts and fruit cake with hints of vanilla and sandalwood.
Palate: A soft, rounded wine with a luscious nuttiness and rancio flavours. The finish is long and balanced.
