Serve between 12 and 14˚c. The wine should be aired or carafed before tasting.
It will reveal floral notes of hawthorn and grape blossom. The wine is particularly lively in the mouth, with sea breezes and a delicious chalky finish.
Our young Petit Chablis vines, planted in areas enjoying full sun exposure on the plateaux overlooking the Grand Crus on the right bank, produce a fresh,vibrant wine, perfect for an apéritif.
· Terroir Portlandian. Right bank plateaux.Very stony topsoil, rich in organic matter. Fine limestone earth.
· Grape 100% Chardonnay.
· Average age of the vine 15 years.
· Vinification With no added yeast, long fermentation using natural yeast, in temperature-regulated tank. Spontaneous malolactic fermentation.
· Maturing On fine lees, only in stainless steel tanks, with as little manipulation as possible, during 6 months minimum. Long stabulation at moderated low temperatures. Fining if necessary using bentonite. One light filtration is performed before bottling.
Chablis is the northernmost of the Burgundian vineyards, its geographical position providing its specific climate.
This climate is characterised by harsh winters, late springs with frequent frosts and hot, dry summers. Above all however, this small vineyard benefits from its unique soil composed of marl, limestone, and oyster fossils of more than 150 million years old.
This extraordinary minerality, along with a 100% Chardonnay grape harvest, produced a now legendary wine eleven centuries ago.
Chablis is characterised by its pale gold colour with green reflections.
Its delicate bouquet reveals lemon and grapefruit aromas. Its originality and uniqueness however, come mainly from its mineral taste with sea breeze notes, which are provided by its terroir.
