Best drunk while young and fresh however, will develop toast and honey characters to compliment the fruit with cellaring.
Modern, trellised vineyard, machine harvested in the cool of night. Well balanced vines grown in the sandy loam soils of the “Skilly” Valley. The soil generally contains broken quartz,imparting the attractive minerality into the wine.
Gentle pressing ensures purity of fruit and minimal coarse extractives. Clean juice cool fermentations in tank maximises retention of citrus and lime fruit characters. Bottled in spring to optimise freshness.
