Beautiful pale straw with an excellent fine bead in the glass. The nose displays heady but delicate and complex notes of lemon, camembert, apple pie and crusty bread. Just what you would expect from a masterful blend of Chardonnay and Pinot Grapes. Now a good sparkling wine is all about the balance. Here you have a soft but fresh finish, the complex flavour rolls into a mouth-filling tickle and slowly melts seductively away.
Classic varieties, early picking, gentle processing of exclusively free run juice, good attention to juice composition and clarity, cold and slow fermentation with classic sparkling wine yeast and then extended yeast lees aging – these were the hallmarks of our base wine production. Delicacy and freshness resulted. The different varietal parcels were blended and a ‘reserve’ volume included for depth and complexity. Then a second fermentation was initiated to naturally charge the wine with its fizz and to bring everything into harmony.

STAFF TASTING: Exhibiting hazel and peanut characters to the nose and with a dry oak, charcoal and quince palate, the Sunnycliff Brut was given a confident seal of approval. Better than most 'budget' sparklings, these bubbles will hold their own at many Christmas tables this Summer. Tasters: BK, MM, TE.
