This bone dry Chardonnay sparkling style is refreshingly crisp and elegant. It is a true aperitif style.
The aromas are fresh and restrained with vibrant primary fruit characters of white peach and citrus blossom. These aromas are complemented with spice, roasted nuts and baked pastry notes from the long yeast age.
As anticipated with a zero dosage (Z*D) Chardonnay style, the wine begins fresh and crisp, followed by a fine, creamy middle palate, with a long and persistent finish. The 30 months of ageing on yeast have contributed créme brulee and savoury notes and has added to the overall creaminess of the palate.
Grapes were sourced from a range of cool climate viticultural sites from the Yarra Valley floor to the high Alpine regions. The Yarra Valley floor produces wines with finesse and concentration whilst vineyards in the higher sites of the Yarra Valley and Alpine regions produce styles which are finer, leaner and crisper.
Chardonnay, Pinot Noir and Pinot Meunier were harvested from late February to early April at 10.5 – 11.6 baumé. Individual parcels of fruit were gently pressed and chilled to stainless steel tanks for cold settling. The cuvée juices were racked off lees, fermented, settled and stabilized. A selection of Chardonnay, Pinot Noir and Pinot Meunier base wines were chosen with creamier middle palates and soft-end palate structures to be the basis of a blend that would not need any sweetening to achieve the final balance. That is, a zero dosage style that is bone dry. The final blend composition is 49% Chardonnay, 44% Pinot Noir and 7% Pinot Meunier.
