Vineyard Conditions: The challenging conditions of the 2007 vintage saw lower yields across most varieties however this allowed for excellent flavour concentration in the fruit. A warm and dry spring followed by timely rainfall in early January allowed the vines to revitalise and build good colour and flavor intensity before harvest commenced.
Vinification & Maturation: The fruit from the 2007 vintage was fermented on skins and pumped over twice a day to ensure maximum extraction of colour and flavour. The wine was then pressed off while still slightly sweet and pumped to new and used French, American and Hungarian oak barrels to complete primary and malolactic fermentation. A portion - 24 per cent - of the blend underwent extended maceration on skins in the fermenters prior to being transferred back to oak for maturation. On completion of primary and malolactic fermentation the wine was racked off lees and then transferred back to refreshed wood for final barrel maturation in a mixture of fine grained French, American and Hungarian oak puncheons, hogshead and barriques. A final racking during this period gave the wine further complexity.
Colour: Garnet red.
Aroma: Pure cassis, mint and leafy fruit aromas with cedar oak and mocha notes from barrel fermentation and maturation.
Palate: A fruit driven, medium weight palate with cassis, mint/peppermint, red berry fruit and leafy notes accompanied by cedar and vanilla oak flavours. The wine has a long, fine tannin finish with lingering fruit flavours.
