Robust and youthful Cabernet is a wonderful childlike wine that needs time. This wine is well balanced to drink now with plush cassis fruit and firm but lovely crunchy tannins. An elegant wine with aromas of mixed berries, dark chocolate and violets. The palate is smooth with blackcurrant and spicy oak flavours and finishes with fine chalky tannins.
Put a few away for another day and see how the child matures?

De-stemmed & crushed to open fermenters. Pumped over up to 4 times daily during peak fermentation. Drained & pressed after 11 to 15 days on skins. Settled for 24 hours before racking to oak for MLF. 12 months oak maturation in new (20%) and seasoned French oak hogsheads.
