Here is a blisteringly good, new vintage 2014, 100% Cabernet Sauvignon from the brilliant McLaren Vale in South Australia. Deep purple with crimson hues the wine shouts, YES , pick me as a perfect Cabernet Sauvignon, bright and sassy in the glass with alluring hues of violet goodness. The aromatic nose of concentrated blackcurrant fruit with dark chocolate and violet notes is a ripper to the senses and you just know the wine will be deep and satisfying on all levels.
This Cabernet is already a concentrated wine with layers of dark berry and blackcurrant fruit, mingling with dark chocolate / mocha and crushed leaf notes. Long lingering finish and will reward careful cellaring for 5-7 years or more to come. 2014 was a low yielding vintage with yields down by as much as 30% which produced concentrated Cabernet Sauvignon fruit with rich textures and flavours. Selected from 2 of our premium vineyards with vines average age of 25-45yrs.
Whilst coming from 2 vineyards, these produced 5 separate parcels of fruit. This provides strong blending options. The wine spent 15 months in a combination of new and used French oak barrels, of which 20% were new.
Food Pairing: Roast beef with Frenched potatoes, Green beans and quince jus!
Cheers!
