Bouquet: Blackberry, ripe plum, tobacco and a lifted leafy note dominate the nose with cedar and soft charry elements from maturation in high quality French oak barriques.
Palate: A concentrated Cabernet Sauvignon with fleshy blackberry and plum fruits and an elegant structure.
Vinification and Maturation: Select vineyard blocks underwent shoot thinning and bunch removal during the growing season to achieve perfect vine balance and ripening. Cabernet parcels were harvested at night and cold soaked separately on skins prior to fermentation to maximise colour intensity and bright, fresh fruit aromas and flavours. The wine was thoroughly aerated and after fermentation, each batch was pressed to tank to finish primary fermentation. Once dry, each batch representing an individual vineyard bock was racked separately off lees into a combination of new French oak barriques (80 per cent) and one to two year old French oak barriques where they underwent a short malolactic fermentation. After time in barrel, the wine was carefully blended and filtered once before undergoing final maturation in bottle.
