Here is another fantastic Cabernet from the Great Southern region of WA. Forest Hill have come up with the goods here; this medium bodied Cabernet packs in bold varietal characters of red fruit, blueberry and dark chocolate around a solid structure with fine, dusty tannins. The finish is long, complex and expressive. One for the cellar!
Awards and Accolades
95 Points, Special Value Wine - James Halliday, Wine Companion "Cool-climate cabernet of great purity. Blackcurrant, graphite and tobacco all speak of the variety, and the cedary oak fits perfectly into the mix. Medium-bodied and elegant in style, the tannin is fine-grained and unobtrusive."
2013 Vintage: 95 Points - Campbell Mattinson, Wine Companion "Essence of cabernet. It flows with blackcurrant, lead pencil, dried tobacco and peppercorn flavours. There's an earthiness here too, in a juicy context. And yet tannin, lacy and integrated, has not been eschewed. It is a quality wine all round."
From the Winery
The fruit was picked then de-stemmed/crushed into 8-tonne open fermenters and inoculated. The fermenters were pumped over with aeration twice a day; temperature was held around 25°C. The wine was then pressed to French barriques for its Malolactic fermentation, allowing a soft integration of the grape and oak tannins. The wine was blended, fined with egg whites and bottled after 18 months maturation.
