This cabernet is deep red to black in colour, with rich aromas of cassis and berry fruit topped with aromas of chocolate and mint. Background notes of cedar are expected to diminish during the course of bottle maturation. Full bodied on the palate, there's serious fruit weight with plush, juicy black cherry and blackcurrant. Grainy tannins work as a counterweight to the fruit component, providing good balance leading into a well structured finish. A blend of
91% Cabernet Sauvignon and 9% Malbec.

From the Winery
In the late part of 2014, in October particularly, we experienced some of the wildest windiest weather for decades, resulting in one of the worst flowerings on record with windy and wet conditions seriously compromising fruit set with the result that the yields of 2015 were the lowest that I have experienced in 23 years of growing grapes in the South West.
The season itself was quite warm in the early part, and very dry. We had a break between white and red varieties as the summer stuttered with some cooler weather giving an extended ripening period for red varieties resulting in well coloured and beautifully ripe grapes. The 2015 red wines are wonderfully well balanced medium bodied, even elegantly structured
Cabernet Sauvignon grapes from the Hay Shed Hill vineyard were harvested at optimum ripeness from the outstanding 2014 vintage. The grapes were de-stemmed into open topped vessels for fermentation on skins with traditional pump over cap management. At the completion of fermentation the wine was left on skins for a further 10 days to maximize the development of the mature tannin. Maturation in French oak barrels for 13 months added further complexity and structure without dominating the fruit.
