I visited the winery recently and was blown away by this. Yarra Valley Cabernet is the real deal! Take everything you love about Cabernet, and then remove the youthful "green" traits and you'd swear you were drinking a 10 year old $100 Coonawarra. Wow!
Perfumed aromas of ripe berry-fruits, anise and dark chocolate are complemented by beautiful French oak. The palate is juicy with savoury varietal flavours and finishes with fine, chalky tannins. Bottled under a screw cap closure this wine will reward cellaring for 10 years and beyond.
Fermentation took place in static fermenters. Colour and flavour extraction was maximised through regular pumping over and cap soaking during fermentation. The wine was then pressed into French oak barriques (25% new) where it was matured for 16 months prior to bottling.

The yields were low across the Valley, with small berries, but this wine is perfectly balanced and extracted, the mouthfeel supple, the flavours of cassis and briar completing an impressive work of wine."
