  Tahbilk Cabernet Sauvignon 2012

Tahbilk Cabernet Sauvignon.gif

Rich and concentrated aromas of blackberry, eucalyptus and spice give to a full bodied palate of equal depth and complexity with an abundance of generous fruit flavours and hints of capsicum and tobacco.
Robust tannins will allow for a beautiful ageing process however perfectly suitable for drinking immediately, especially when paired with red meats as the flavour will cut through any fat.

James Halliday winery of the YEAR 2016

James Halliday: 94 (2012)
Excellent hue; manages to combine elegance with uncompromising blackcurrant/cassis, black olive and herb varietal expression; the elegance derives from skilful handling of tannins, and a celebrated vintage.

Graeme Phillips - Hobart Mercury
A richer and sweetly ripe style with plummy fruit and touches of chocolate and mint, the palate mid-weight and nicely balanced around a firm backbone with smooth and gentle, fine-grained tannins to finish. Given Tahbilk’s record, it should easily last for a decade or more.

Ray Jordan – The West Australian
This wine is all about elegance and style. Slightly fleshy medium-weight fruit supported by fine tannins and a silky, fine-grained oak addition. Focused and effortlessly long. Excellent wine with some better things ahead if left in the cellar. 91/100

The Australian Wine Companion
A winery steeped in tradition (with National Trust classification), which should be visited at least once by every wine-conscious Australian, and which makes wines particularly red wines utterly in keeping with that tradition. The essence of that heritage comes in the form of the tiny quantities of Shiraz made from vines planted in 1860. Serendipitous, perhaps, but the current release wines are absolutely outstanding. A founding member of Australia's First Families of Wine.
