From the Winery
Crafted exclusively from estate grown fruit, Old Block Cabernet Sauvignon honours the winery’s international reputation for making superb red wines. The fruit was destemmed only and whole berry fermented in small open-top fermenters. This technique allowed the primary fruit characteristics to be brought through to the end of the wine. The ferments took approximately 8 days to extract the perfect balance of structure and aromatics prior to pressing. The wine then undertook malolactic fermentation in a mix of new to 4 year old French oak barriques and then aged in those same barrels for 18 months.
