Colour: Deep red with ruby hues.
Bouquet: The wine exhibits vibrant aromas of blackcurrants, ripe briary fruits and mocha entwined with hints of spicy, toasty oak.
Palate: The full-bodied palate is packed full of juicy ripe blackberries, cassis and dark chocolate characters. A generous wine with supple, silky tannins, fleshy fruit characters and a warm, lingering finish.
Vintage Conditions: 2007 will be rememberd for a few reasons; importantly, it was a season which produced exceptional quality fruit, but also because it was the earliest vintage we have ever experienced in Margaret River. The early harvest followed a mild spring, and relatively dry growing season, which produced good flowering and excellent fruit set.
Winemaking: The majority of fruit was harvested from the Xanadu Estate (88%) with the balance from select vineyards in the Margaret River region. The fruit was crushed and destemmed then fermented in a combination of static and Sweeper-arm fermenters at 26oC for 5 – 7 days. The various components underwent malolactic fermentation in tank and barrel before 12 months maturation in a selection of predominantly French oak barriques, 35% of which was new oak.
