This wine exhibits vibrant, aromas of cassis, dark plummy fruits and mocha, entwined with hints of sweet, toasty oak. The full bodied palate is packed with juicy blackcurrants, ripe briary fruits and chocolate characters. This is a generous wine with ripe, approachable tannins, and a warm, lingering finish.
Whilst drinking well in its youth, the 2005 Dragon Cabernet Merlot will gain further complexity with bottle maturation, and will certainly reward with medium term cellaring.
The 2005 Vintage began early - March – two weeks later than usual, after a cool spring and summer. This long cool ripening period made for excellent intensity and flavour development. The fruit was crushed, destemmed and chilled before pressing. The settled, clean juice was then fermented in stainless steel tanks to retain fresh varietal characteristics. The final components were then selected and assembled prior to a gentle fining, stabilisation and bottling under screw cap closure.
