Cherry blossom, spice, sappy, intense, Pinot Noir varietal characters. Subtle oak complementing the highly perfumed bouquet. The palate is juicy and dominated by plum and cherry fruits with long fine tannins.
Cherry Hills Vineyard at Oakbank is the lynch-pin of our Adelaide Hills range, producing three main varieties – Sauvignon Blanc, Pinot Noir and Chardonnay.
This site is special; well exposed with a north-east aspect to maximise the suns rays, leading to a long, even ripening and grey-loam soils with a high degree of quartz and a thin layer of schist just below the top soil.
The vines are vertically shoot positioned to promote even ripening & reduce shading. Pruning levels are balanced to control vigour and yield.
The fruit is de-stemmed, not crushed, into small 1½ tonne fermenters and cold-soaked for four days, gradually warming as the fermentation commences. The fermenters are hand-plunged as required to break up the cap; fermentation temperature peaking at 32°. Post primary fermentation the wine was left on skins for a further 15 days, then pressed and racked into 100% French Oak, Sirugue and Dargaud et Jaegle: ⅓ new, ⅓ 1-2 year-old, ⅓ 4-5 year-old.

Established in 2001, David O’Leary and Nick Walker combine a wealth of experience gained during their time as corporate winemakers behind such labels as Krondorf, Hardy’s, Yellowglen and Annies Lane.
Matching the best fruit from the best viticultural districts is the thumb print for producing the best varietal wines, and is the philosophy behind O’Leary Walker. Based at Watervale in the Clare Valley, South Australia, O’Leary Walker Wines is a new winery on the scene, rapidly gaining a reputation for producing great regional wines at affordable prices.
