Colours are moderate to good (although lighter than last year.) The bouquet displays White Hills’ typical black cherry aromas overlaid by floral notes. The palate shows sweet, plummy fruit supported by some quite firm tannins. Age 1-3 years and serve in a big glass to capture the perfume.
While average temperatures for the year were warm, there were no extremes, allowing for very even development. A slightly early budburst was followed by a good flowering and fruit set, although bunch numbers were lower than average. Rain during harvest meant some botrytis in the lower sites, but the low to moderate yields in most varieties gave small volumes of good quality fruit.
SOUTH is about producing fresh, aromatic wines to complement modern food styles, using the finesse of northern Tasmanian fruit. The combination of a truly cool climate and summer rainfall, features which we share with northern France and New Zealand, make Tasmania particularly well suited to the production of these earlydrinking wine styles.
