  Willunga 100 Cabernet Shiraz 2014

Willunga Cab Shiraz.gif

The 2013 vintage sold out in record time and we have waited breathlessly for the outstanding 2014 vintage to arrive. Well , not only is the wait over - It was more than worth it. Luxury in all senses of the word with delightful depth and structure in every department. You will have to go a long way - indeed the proverbial country mile to find a wine as good as this at $25 let alone this price . So, be bold, dig deep and savour the absolute bloomin savings' on a tip top red!

Ripe blood plum, mulberry, coupled with a hint of tomato vine and eucalyptus are in balance with the rich earth Shiraz characters. The palate is a smooth blend of the Cabernet tannins coupled with cherry and spice from the bolder Shiraz and a smooth lingering finish. French oak is in a supporting role to the tannins and fruit.

Best Cabernet Predominant blend - McLaren Vale Wine Show 2015

From the Winery

Willunga 100 is in the McLaren Vale region of South Australia, about 40 minutes south of Adelaide. We source our fruit from an array of vineyards, some of which are up to 96 years old, reflecting the character of the area and the varieties from which they are made. Willunga 100 Wines are made by Mike Farmilo with Tim James consulting.
Vineyard

Our Cabernet for the 2014 vintage comes from the Azzolino vineyard which are 30 year old vines grown on heavier dark clay soils. And Cabernet from the San Remo vineyard in the Seaview Sub region of McLaren Vale with loam over limestone soils. A portion of the Shiraz also comes from the Azzolino vineyard as well as the Hillside vineyard which is located in the Sellicks Hill sub region and is generally one of the first Shiraz vineyards to ripen in the district. The climate of McLaren Vale is often compared to that of the Mediterranean, warm sunny days, with sea breeze influences from the nearby Gulf of St Vincent. These warm days in union with the cooling maritime evening changes are perfect for ripening the grapes whilst maintaining a crisp, clean acid structure.

Each parcel is fermented separately in a combination of open fermenters and stainless steel pump-over tanks. Warm ferment temperatures of around 28-30 degrees, combined with a targeted pump-over and plunging regime allows for optimum extraction without over extracting the tannins, and still maintaining fruit purity. Timely pressing, only using the best press fractions ensured good quality of flavour. The wine is then matured in both new and old French oak and some in stainless steel tank to allow a portion of intensely aromatic wine to be blended back with the barrel aged wine. It’s bottled under screwcap to maintain freshness and ensure longevity
