Very pale pink in colour with gentle creamy aromas and some biscuity notes. The palate is soft and light, with flavours of cherry, strawberry and a fine effervescent texture. The finish is dry and cleansing, making this the perfect match for cured salmon.
From the Winery
Gently pressed and the finest juice from the batches is selected and fermented in both tank and cask. The wines are then allowed to undergo malolactic fermentation and are stirred weekly for 3 months to integrate the fruit, yeast and the textural characters from the oak. The base wines are then blended and transferred to tank where they sit on lees for varying lengths of time and are over blended with 'reserve' wines from previous vintages.
