Deep in colour with aromas of crushed berries and dried herbs, this is a classic Shiraz. Richly flavoured with spicy plum, dark fruits and smooth vanilla and chocolate.

From the Winery
Shiraz is Australia's favourite red grape and a Rutherglen treasure. We are lucky enough to have very old vines, with all the intensity and depth of flavour that they bring. Shiraz is a pleasure to work with because of the way it carries flavours and aromas specific to the region, and even the vineyard block, and layers these on top of a base of rich, soft plummy fruit.
The fermentation was allowed to start spontaneously in our 7 tonne open fermenters. The temperature was maintained in the mid 20s for the body of the ferment and allowed to rise naturally to 32C at the end. The cap was hand plunged three times a day during the fermentation and then once a day for the two weeks the wine spent in post-ferment maceration on skins. Pressing was in our 1883 hand-cranked wooden basket press with pressings held separate. The finished wine was matured in old oak puncheons and barriques for 16 months.
Back in the Old World there is an assumption that the local wines and local foods go together. We are beginning to see those synergies develop here and one of the great matches is our Shiraz with locally reared Rutherglen Lamb.
