Colour: Violet red with a ruby hue.
Nose: A fragrant measure of archetypal Barossa earthiness, black cherries with wafts of leather, spice and mint.
Palate: A supple palate full of dense dark berry fruit and stewed plums, delivered with rich mouth-coating veins of rum and raisin chocolate, toasty oak and nutmeg/mace like spice. The harmonisation of the fruit and textural elements allows this primary expression of the vineyards to extend out of the mid palate. Finishing with a firm backbone of lingering dry tannins and a warm satisfying finish.
The 2007 vintage will be remembered for the tiny crops. An extremely dry lead-up to the vintage, with virtually no spring rainfall, resulted in yields from the old vines we source our fruit from being down by 70% on their average. However, what we lost in quantity, we made up for in quality. The small berries resulted in extremely concentrated colour, !avour and tannins. Two years in French oak followed by a further two years in bottle prior to release has allowed the tannins to soften and integrate perfectly with the fruit and oak. This wine will continue to improve with age. What a babe!
Warm fermentation in static fermenters on skins for 10 – 14 days at 22°C. Gentle pressing o# skins using airbag press. Malolactic fermentation and maturation in oak as below. Bottled and matured under premium cork for two years prior to release.
