It doesn't get any more Australian than sparkling shiraz. This vintage version from Schild Estate shows dark berry, cherry and plummy fruits on the nose, with a generous lick of chocolate. The palate is a tad sweet with mellow tannins, approachable acid, and a creamy, spicy finish.
These wines go amazing well with indian food, and also with chocolate desserts. A refreshing fine bead opens the way for vibrant berry fruits, a soft tannin structure and a delicate acid sugar balance to follow and ensure both lushness and freshness on the palate for the drinker.
From the Winery
The wines from 2015 show much promise, however some late growing season heat and rain episodes ensured that it was not without some nervous moments for the winemakers along the way. A certain amount of nerve was required, but mother nature came to the party in the end and mild perfect conditions late in the season ensured we made it home really happy with the vintage.
Uniquely Australian and heartily embraced in the Barossa, Sparkling Shiraz has been a part of the Schild family’s stable of wines right from the early days. Ed Schild quickly realised that the soft dark berry fruit, fine tannins and vibrant acid so often seen in Shiraz sourced from in and around Lyndoch in the southern Barossa made it an area ideally suited to making “red fizz”.
Over many years he and his son Michael have worked with their winemakers to find the right blocks to showcase and to refine the style. It is a continuing journey, but a thoroughly fun and enjoyable one.
